Amy's mom and dad, Rachel and Andy, met in India and love to bring Indian cooking to Amy's customers. A dear friend allowed us to share this recipe for pakora, a traditional Indian fritter often bought from street vendors as a snack. We've made Amy's Indian Vegetable Pakoras into a hearty meal, starting with chickpea flour dumplings stuffed with organic cauliflower and potatoes that are lightly fried to perfection, then simmered in a delicately spiced yogurt sauce and served with organic basmati rice. Great flavor starts with great ingredients. Our task is to find them. We try to stay as local as possible, and we can grow wonderful short and long grain rice in California, but Basmati rice, for unknown and mysterious reasons, just tastes better when it’s grown in India.
