This vegan Caesar salad dressing is the perfect combination of salty, creamy and tangy. It’s good enough to eat with a spoon -- but it’s even tastier on top of kale and crumbled Amy’s Veggie Burgers. Even people who aren’t vegan will love it. (And we are quite sure that these veggie burger "croutons” will become one of your new go-to’s for guest-impressing salads.)
- For the dressing – Combine all ingredients, except chopped capers, in a small food processor and mix until smooth, scraping down the sides frequently to incorporate all ingredients. Fold in capers and refrigerate dressing until ready to use.
- For the salad – Prepare the Veggie Burgers as specified above. In a large bowl, add kale, drizzle with dressing and toss to coat evenly. Season with a few turns of freshly cracked black pepper and a pinch of salt. Top with Veggie Burger “croutons” and sprinkle with nutritional yeast for garnish.
There’s only one thing that could make this salad even more delicious – avocado. Slice one up and enjoy.
