Directions
- Make Amy’s Macaroni & Cheese according to the directions on the box then add an extra 1⁄2 cup of grated cheese and mix together thoroughly. Pour into a 9x9 dish, cover and chill overnight or for at least 5 hours.
- Once the mixture is chilled, use an ice cream scoop to form balls then place them on a parchment-lined baking sheet.
- Pour a half cup of bread crumbs into a bowl and add salt to taste. Roll the balls in the bread crumbs.
- Pour 4 cups of vegetable oil into a deep saucepan then heat on medium-high until the oil reaches 350°F. Gently drop the balls into the oil and fry for 3-5 minutes or until golden brown.
- While the balls are frying, make a tangy ranch dip by mixing vegan mayo, milk, onion powder, garlic powder, dill, parsley, chives and lemon juice. Season with salt and freshly ground pepper then set aside.
- Serve the macaroni & cheese balls warm, alongside the dressing for easy dipping.
