Serves 3-4 You'll want 2 or 3 each (recipe makes 8 balls) Easy

Directions

  1. Cook the 3 Cheese and Kale Bake according to package instructions. Spoon the pasta onto a plate and spread out. Leave to cool for 5 minutes.
  2. Tip the breadcrumbs onto a large plate.
  3. With slightly wet hands, shape the pasta into 8 evenly sized balls. Then roll these, one at a time, into the breadcrumbs until well coated. Place in the refrigerator for 1 hour.
  4. Pour the oil into a large saucepan over medium-high heat until the oil reaches 350°F.
  5. Gently lower the balls into the oil, a few at a time, and cook for 4 minutes until golden and crispy. Use a slotted spoon to remove onto a kitchen towel-lined plate. Fry the remaining balls.
  6. Pile onto a serving plate, dust with a little smoked paprika and grate over the lemon zest.

Pro tip

To make these even cheesier, finely grate over any hard cheese to finish the fried mac & cheese balls.
