Dear Amy, From someone who spent three years living in Italy and despises "Italian food" in America, this soup left me gape-mouthed. From the first spoonful I felt as though I could've been in a family run restaurant in Florence where I lived. I gaff at those in Michigan who offer to take me to an Italian restaurant here...nothing ever compares, let alone finding a canned soup that takes me back to the motherland. Seriously. THANK YOU THANK YOU THANK YOU! Now if only I can resist the temptation to pass it off as homemade to my family and friends...Saluti! From Beth
Chicken soup is great for whatever ails you this time of year - unless you're a vegetarian. Amy's new Thai coconut soup in a can has the same comforting, warming character as chicken noodle, without meat. It's a brothy, creamy soup with the flavors of coconut milk and lemongrass, studded with tofu, shiitake mushrooms, sweet potatoes and other organic vegetables. It would make a nice first course or a light meal and would go down easily if you're sick.
