Chicken soup is great for whatever ails you this time of year - unless you're a vegetarian. Amy's new Thai coconut soup in a can has the same comforting, warming character as chicken noodle, without meat. It's a brothy, creamy soup with the flavors of coconut milk and lemongrass, studded with tofu, shiitake mushrooms, sweet potatoes and other organic vegetables. It would make a nice first course or a light meal and would go down easily if you're sick.
Dear Amy, From someone who spent three years living in Italy and despises "Italian food" in America, this soup left me gape-mouthed. From the first spoonful I felt as though I could've been in a family run restaurant in Florence where I lived. I gaff at those in Michigan who offer to take me to an Italian restaurant here...nothing ever compares, let alone finding a canned soup that takes me back to the motherland. Seriously.
