Our favorite spring flavors unite in this fresh and bright Spring Veggie Paella! The flavorful base uses authentic Spanish spices, and it serves as the perfect pairing to zingy, lemon-dressed spring produce. Best of all - it only takes 15 minutes to make!


Serves 2 Easy


  • Prepare Amy’s Paella Bowls according to instructions on package.
  • In a bowl, combine asparagus, snap peas, radishes, fava beans and arugula. Dress with olive oil and lemon juice and season with salt and pepper.
  • Empty the cooked Amy’s Paella into individual bowls and top with half of the spring veggies on each then enjoy!

Our tasty paella is the perfect base for a topper of any seasonal produce you may have on hand so feel free to alter this recipe based on what’s freshest!
