The New York Veggie Burger

This delicious veggie burger is a fun take on the much loved classic Reuben sandwich. The combination of rye bread, sauerkraut and melty Swiss cheese is addictive, and the creamy sauce just takes it over the top!


Serves 4 15 minutes Easy

Directions

  • Prepare the creamy sauce by combining the mayonnaise, ketchup, relish and onion flakes in a small bowl. Add salt and pepper to taste and set aside.
  • Cook the veggie burger patties according to package directions.
  • Meanwhile, preheat the broiler on high and place all of the bread slices on a baking sheet. Top four of the slices with the Swiss cheese and place the baking sheet in the oven to broil. Keep a close eye, as they broil, to ensure they don’t burn. The slices with no cheese should be lightly golden, and the cheese should be melted on the other slices. You may need to remove the slices without cheese before the cheesy ones.
  • To assemble, top the cheesy bread slices with some of the creamy sauce, followed by the veggie patties, sauerkraut and the remaining bread (with the golden side face-up). If desired, use toothpicks to attach a dill pickle to the top of each sandwich. Serve immediately and enjoy!

Pro tip

Make this burger dairy free by omitting the cheese slices and making sure your rye bread does not contain any dairy. You can also swap in your favorite vegan cheeze!
