This versatile vegan chickpea salad makes the perfect topper for Amy’s Gluten Free Rounds. With zingy lemon juice and fresh herbs, it’s a flavorful and filling dish that we can’t get enough of!
Thaw 4 Amy’s Gluten Free Sandwich Rounds in the microwave or toaster oven.
In a large bowl, whisk together all other ingredients, except for the chickpeas and greens. Once the sauce for the chickpea salad is completely combined and smooth, fold in the chickpeas. Season with salt and pepper to taste.
Set out the GF rounds on a plate and mound the chickpea salad on top. Garnish with greens and enjoy!
