Gluten Free Almond Shortbread Cookies
When Amy was little her grandmother used to bake cookies made from simple organic ingredients - wheat flour, sugar and butter. Then the two of them would happily munch on their cookies and drink peppermint tea. However, like many people nowadays, Amy doesn't eat wheat, so our chefs created a gluten free version of the classic shortbread cookie. The results were amazing!

Your apple pie is the perfect treat. Sometimes I like to offer a special treat to my young boys (and when I want a tasty treat myself). I will reach for one of your apple pies on just such an occasion. You should see us digging in with our spoons at the same time (not a pretty sight, I assure you). I’m sure it would be great with a scoop of ice cream as well. Hmmmm, might have to try that next time.
