Amy’s Indian Paneer Tikka
(9.5 ounces, suggested retail price: $4.29) When Amy’s Indian chef, Saroj, worked on this recipe, she created her own authentic blend of spices (masala) instead of using a prepared mix. Then she added the masala to a base of organic crushed tomatoes and coconut milk, with soft, creamy cubes of Paneer (Indian cheese) to produce a marvelously tasty, but not too hot, dish. Alongside the Paneer Tikka are Aloo Palak (delicately spiced organic chopped spinach and tender organic potatoes), and organic basmati rice flavored with cumin and carrots.
