Walk the Talk

Me and my garden.
When I was a little girl, we had a big organic vegetable garden behind the house. I have faint memories of picking snails off broccoli and eating plums and tomatoes fresh from the garden. Oh, the good old days. In third grade, our vegetable and fruit garden was, sadly, bulldozed away and replaced by a lot of concrete in the form of a swimming pool. I was thrilled. I still am. But a couple of months ago I started missing fresh vegetables and felt the need to get my hands in the dirt. Then my boyfriend Andrew teased me for being the Amy of Amy’s Kitchen and not even having an organic garden. He said that I talked the talk but didn’t walk the walk. That was the last straw. Last weekend, we built three raised beds and had some dirt trucked in. I decided to start with starts (baby plants) instead of seeds. I know that’s kind of cheating but it is a little late in the season and I am not very experienced. I went to the nursery but they didn’t have very much. I bought what they did have and planted it in the freezing weather. You wouldn’t think it was late March /early April with the weather we are having right now. I will plant some more when I get back from Mexico and will let you know how my plants are surviving, and what variety I planted. So far I have bell peppers, cilantro, strawberries, green tomatoes, and all different sorts of lettuces. (My picture is from mid-May…my plants are starting to get bigger).

Hey Amy, how’s the crop coming along?? Mine’s doing OK. After last weekend’s cold rain I feared the worst for my basil, eggplant and tomatoes – but they seem to have survived. My lettuce, however, loved the cooler spell and are now twice the size from last week! Looks like a lot of salad will be eaten around here over the next few days… keep on greening your thumbs -

Amy, I’m one of these people who have to know the “whys” of things. After I baked your vegetable lasagna and was leisurely eating it, (it was great, by the way,) I read “Do not use a toaster oven.” Yikes! I baked it in a toaster oven! WHY? Are my ears going to wither and fall off now? What is the techical and real reason not to use a toaster oven? It uses less energy and therefore more “green friendly.” I NEED to know! :-)

Our paper containers have, on occasion, been known to catch fire in the toaster oven. Wouldn’t that be a sight! That’s why we strongly encourage you not to use it, but if you would like to, you can switch the product into a toaster-oven safe dish and then there will be no need to call the fire department :)
    Hope this helps!

We tried your veggie burgers this eve. , mixing them with tomatoes, black beans, lime juice, corn and walnuts. Very good! However, we both thought that the burgers were saltier than they needed to be. Could you reconfigure the sodium content? (Reducing it by 150 mg.) We would love for you to do so–we’d like to become loyal consumers.

Hi Amy, I just found your blog and enjoyed seeing you at graduation and enjoying your summer. Mac is back in town and soon will be heading off to school in Oregon. She is really excited to be going. Dave and I are sailing on our trimaran at a big mountain lake and soon will take a llama, named Joe, on a trip into La Garita Wilderness area for our anniversary trip. We are all doing pretty well, I guess. I am sending a few pictures on the other e-mail site…Maybe someone will recognize us… Love and a big hug, RS Melinda
PS The Movie “An inconvienent truth was excellent. I am riding my bike and taking a bus to work.

Sounds like you were smart and made him your EX- boyfriend!
I think he was just jealous!
Just tell him that you were born into the Vegetable Family and that’s good enough! Then find a place fo another garden and don’t share it with him!!
Any guy who say’s something that dumb is not good enough for you anyway!
Your far too pretty to have anyone question your family’s good name!
I know, he was probably just kidding around, but that’s a bone head thing to say any way! And that is my opinion. He should have just been thankful for the free pizza! ;o) Keep up the good work Hon.

Thank you. I have found out I have gluten intolerance and just moved to the Phoenix are from a small town. There I had to drive 4 hrs to a health food store that had stale rice crackers and nothing much else. I am not a cook but I am learning and it is so great to find at the fry’s store in San Tan Hights area across from Johnson’s Ranch.( South Eastern Phoenix Metro Valley). The Amy frozen entrees. I can eat when I am hungry now. Thank you. Bonnie
