Hola, I am glad to hear that you enjoyed your time here in Mexico. It is great for people to hear that what they are seeing on the news about all the violence is very localized and most people, like yourself, were able to come and enjoy all that our wonderful country has to offer. Wow, small world! I am currently living in Puerto Vallarta and Planeta Vegetariano is one of my favorite restaurants here. That’s so awesome that you are *the* Amy of Amy’s Kitchen – before I moved down here I used to buy your food all the time! My favorite is the spinach feta pocket sandwich thingy. It is really too bad you’ve already left PV because I would have loved to meet you; we have a lot in common. Take care

Living half my life down south( San Antonio and the other half up north ( North East Coast) I always remember the great Mexican Food and how easy it is to be vegetarian there
I am sure your parents are really proud of you… You should bring them back some seeds from some of the sunflowers they use for “the day of the dead” and also all the great hot peppers…
You seem to be living a charmed life..

Hi Amy,
My daughter Jennifer, age 22 also studied in Mexico. She just graduated from the University of Oklahoma and spent a year in Mexico. She went to Autonoma in Guadalajara. She really enjoyed it and is now fluent in Spanish. Her major was International Studies. She now works for the State of Arizona. I went to visit her and although she was better in Spanish than I am, it was a great experience for both of us. I LOVE all of Amy’s foods. My daughter likes the macaroni and I like the lasagna. Best wishes to you, my favorite expression in Spanish is “asi es la vida”
