Migrain
Hello Amy's!

I discovered your products because I suffer from horrible migraines when I consume various preservatives or MSG. I know this kind of reaction to MSG is common, but I'm not so sure about preservatives. So while I'm not a vegetarian, I sure don't mind being one when I eat your products. Not only do they save me loads of pain, they are truly delicious. Even if I didn't have to watch the ingredients, I'd probably eat them just on taste alone they are so good.

The headaches can take anywhere from 4 - 36+ hours to develop depending on which preservative and amount consumed. Yes, that delay made and makes it tricky to track down the culprit! In case it might help someone, here's a list of preservatives I know cause me migraines:

Sulfites (in all its many forms. yes, this means no wine, missed for flavor, not the alcohol :( ), sodium phosphates (again many variants of this), BHA, BHT, TBHQ, calcium disodium EDTA and tetrasodium EDTA. I also avoid Dimethylpolysiloxane (the anti-foaming agent added to frying oil in many restaurants.) Yes, they're feeding people this chemical to avoid burning employees by oil splattering instead of finding some other way to solve the problem, though I can't really tell if it's that or the preservatives in the food that's fried. At this point I don't care to know.... Sodium benzoate and Polysorbate 60/80 are on my suspect list, not yet really confirmed.

They may protect profits, food, and flavor, but they sure don't protect ME!

I discovered all this by my own trial and error, not by any other tests. I went to a family doctor several years ago. I told him my father has the SAME problem and cause, and therefore I highly suspected the same of myself. His response? Unfortunately he just gave me a prescription sample. "Because the drugs work so well," he said, "let's try to solve this by drugs first, then look at other things if they don't work." Well, I ignored him and did my own "testing". I STILL can't believe his response. Now that I've just moved to a more populated area, I may try to see an allergy or nutrition specialist and see if there is anything more I can find out. But there may be little or nothing to gain when I've already found the cause?

I am also lactose intolerant, but I take lactase enzyme and that does the trick (with the exception of drinking milk straight).

Thank you Amy's for not using any of these chemicals in your food. It has literally made life livable some days.

Lactose Intolerance Letters:

Amy's KitchenDear Amy,
I nearly cried in the grocery store on Thursday. Soy Mac N Cheese? I couldn't wait to tell my 12-year-old son. He is totally lactose intolerant. Can't stomach even a sip of milk. I've made Mac n Cheese from scratch, it's a pain, but he loves it. He is so happy to have your soy cheese pizza. When I saw that box of Soy Mac N Cheese, something he's been wishing and hoping for, ASKING for, I had to buy 2, because I knew he'd eat one right away and want another one the next day. Thank you for making soy cheese foods, and for making our day! I'll be stocking up and waiting to see what you do next!

Dear Amy's,
Thank you so much for considering the lactose intolerant people when you develop recipes. I have to say your Mac and Soy Cheeze meal is delicious! I hardly miss the real thing. I was so excited about how delicious it was when I tried it I told all my friends. Please continue to create more delicious lactose free meals! Also great job on the Veggie Loaf, it was awesome!

Dear Amy,
My eyes filled with tears tonight as I realized that my 4th child (2 yrs) could eat like her big brothers for once--mac and cheese! We are vegetarian, and she is lactose intolerant--it is almost impossible to feed her--since we eat a lot of cheese and milk products as part of our protein intake---thank you for making healthy meals that we can all eat together--making her feel "normal"--that are delicious, organic, vegetarian, and lactose free!
Love, SarahBeth and her mommy

Dear Amy,
Words can't describe how thankful I am for your awesome products! When I discovered that I was lactose intolerant, it was difficult to adjust to a life without dairy... and most dairy-free foods just taste terrible.
But your meals taste great and keep me very happy (especially the tofu
lasagna! Yum!) Keep up the great work!

Dear Amy,
I am not vegetarian but I am lactose intolerant. I decided to try your meals after a friend at work brought one in for lunch. Your products are a godsend. I had tried some vegetarian frozen foods before and had been less than impressed. Your foods are great and the seasonings are perfect. With such a variety of dairy free meals I found this week I had been a lunchtime vegetarian!
Thanks I will keep looking for more of your products,
Bev

Celiac Disease Letters:

Dear Amy,
Amy's Kitchen
As a gluten-free vegetarian (now vegan!) I have wished a veggie burger existed that did not have wheat gluten in it. Your Bistro burgers not only fill this need but they are delicious! Thank you so much for these as they have made my life easier and tastier!

Dear Amy,
I started buying your products about 6 years ago because they tasted great. But now things have changed for me, I was diagnosed with Celiac and have started to cut out a majority of foods except for your products. You guys have saved my life! I now can continue to use your products because many of them are gluten free. What a relief. Thank you for all your hard work and please continue to expand your gluten free product line.

Amy's KitchenDear Amy,
I was recently put on a gluten-free, dairy-free diet after years of eating whatever I wanted (hence the reason for going on a diet). I was nervous about the change, went to the store for new foods and was excited to see the Rice Crust Spinach Pizza with soy cheese since I had been craving pizza for a week. To my surprise, it was SOOO tasty. I had to refrain from eating it all! I can't wait to try your other things!

Dear Amy,
My fiancé and I practically live off Amy's. I don't know what I'd do if
you ever went away. And since my fiancé has Celiac, we love all the
gluten free products and can't wait to try the new burger (since all
veggie burgers have wheat). All of Amy's foods are amazing, thank you so
much!

Dear Amy,
Thank-you so much for your wonderful products. I am a vegan with celiac
sprue. Your new Bistro burger is great!! It is difficult to find a
veggie burger without gluten, and it has no oil!!

My son (11) is a very picky eater and he loves your gluten free vegan
pizza. I teach proper lifestyle choices in my husband's Internal
Medicine practice and can recommend your products without hesitation.
Great job!!

Thanks again,
Marla

Thank you so much for your yummy rice crust pizza. I"m 51 years old and 3 years ago I went from a healthy weight of 107, 5'1 down to 79lbs. told by countless doctors it was all nerves. Shame on them, referred to the world renowned infectious disease doctor, Dr. Leon Smith....celiac disease.
In less than a week the weight was coming back on. I would appreciate so much any gluten free items.

Sincerely, Karen Walsh

Dear Amy,
I was diagnosed with Celiac just about a year ago. You have made my life so much easier than I ever expected. I look forward to all the new and exciting foods you bring to my table. I don't feel like I'm deprived of anything! In fact I've gotten a chance to try a lot of new things, that I probably wouldn't have had.

Keep up the great work.
Thank you and regards,

Amy's KitchenDear Amy,
Thank you so much for making this wonderful pizza! For the first time in more than a decade I finally got to enjoy the simple pleasure of a pizza. When I visited Sun Harvest yesterday, imagine my surprise and delight when I spotted your Spinach Pizza: Rice crust, non-dairy in the freezer case! I'll admit, whenever I went to Sun Harvest I'd drift by the pizza area and yearn at the pizzas, hoping against hope there'd be one for me (I've allergies to a variety food items-wheat, dairy, beef, bananas, MSG, alcohol, so I read labels vigorously), and lo and behold, this visit there was! I grabbed two!

Oh, it was so good last night! I nibbled my way down through half of it and finished the rest off today for lunch. I am one happy camper! Thank you so much for making products I can eat and enjoy too. (Any plans for a wheat-free, non-dairy pocket sandwich? Lasagna? Pot pie?)
Sincerely looking forward to buying more of your products,

Dairy Allergy Letters

Dear Amy,
My 2 year old son has a dairy allergy (he's allergic to whey but not
casien). He also goes to daycare where everyone gets to eat pizza and
mac n cheese. Thanks to your wonderful food, he too can have these kid
friendly foods. In addition to the soy pizza and the mac n soy cheese,
he love the burritos and pot pie. Thank you so much for your wonderful
food!

Dear Amy's
We just tried the dairy free rice crust spinach pizza for my 3 yr old son who is very allergic to all dairy. Thank you so much for making a pizza he can have! He's never been able to enjoy pizza, always looking at it on other's plates and asking for his own. This time when I said this was his pizza he was so excited it made me cry. Please develop
more of this type of food.

thank you for making our son's day!

Gluten Intolerance Letters:

Amy's KitchenAmy, you have made my wildest dream come true!! I was convinced that a gluten-free, vegan pizza was merely a fantasy...but you've done it!

Sodium

Dear Amy,
I just wanted to send a huge pat on the back for making such fantastic food, but for making them low in fat, salt and cholesterol...My husband has been trying to get his under control, so I was so happy to find your products. It fulfills all of his needs but still tastes great which is always the most important factor...amazing job!

Dear Amy,
Aloha from Hawaii!

We are big fans of Amy's products over here in the islands. Keep the new items coming!

We were introduced to Amy's line two years ago, upon discovering our daughter was allergic to eggs. Now Kai is an active two year old who absolutely loves her spinach pizza and pesto tortellini.

My husband John, an elite Open Water swimmer, has recently come out of retirement to train for the first ever 10K Open Water event in the 2008
Olympics in Beijing. Whereas five years ago he was a typical fast food
junkie, he now credits healthy eating as part of the reason for being able to re-enter the competition field and perform well. Amy's provides the perfect post-training meal.

Mahalo nui loa and keep up the good work.
